摘要:

The protein of wheat is the important resource that human needed. It is suggested that the difference of wheat protein quality was not only affect by genotype, but also by environmental factors. A lot of research results confirmed that the latter is more important than the former. This paper summarized the conclusions of national and international about the environmental factors on wheat protein. And discussed the research prospect of wheat protein.

Abstract:

小麦蛋白质是人类所需蛋白的重要来源,小麦蛋白质的变化不但受到基因型的影响,也受环境的影响。本文综述了国内外在温度、光照、水分和土壤等环境因素对小麦蛋白质影响方面的部分研究结果及存在的主要问题。在此基础上展望了小麦蛋白质研究的发展方向。
