摘要:

为研究变性淀粉对于食品保鲜的应用效果和扩大其应用范围。以溶液共混法制备变性淀粉/壳聚糖涂膜液,加入纳米氧化锌和尼辛改善膜的性能,研究不同被膜对鲜切冬瓜的保鲜效果。制成不同涂膜液对鲜切冬瓜进行处理,在室温下贮存。结果表明:纳米氧化锌和尼辛的加入能明显增强涂膜液的抑菌性能;同时,变性淀粉价格较壳聚糖低,具有很广阔研究价值和应用前景。

Abstract:

Modified starch for food preservation effect and expand its scope of application. Altogether mixes the law preparation denatured starch/shell polyose paint film fluid by the solution, joins a nanometer zinc oxide and Nepali Xin improved the membrane the performance, the research different button to fresh-cut melon the effect. Makes the different paint film fluid to fresh-cut melon to carried on processing, stores under the room temperature. The results showed that a nanometer zinc oxide and Nepali Xin join could strengthen the paint film fluid obviously the bacteriostasis performance; at the same time, the denatured starch price compares the shell polyose to be low, has the very broad research value and the application prospect.
