植物马槟榔及其甜蛋白马宾灵(MabinlinⅡ)的研究进展

摘要: 马槟榔(Capparis masaikai Lévl.)是中国特有的在果实中富含甜蛋白的野生植物资源,其种子中所含的甜蛋白马宾灵(MabinlinⅡ)的甜度是同等重量蔗糖的400倍。马宾灵在目前已发现的7种植物甜蛋白中具有最佳的热稳定性和耐酸性,将其作为一种新型甜味剂在食品领域有着极为广阔的市场前景。本研究概述了植物马槟榔的研究现状,分析了其甜蛋白马宾灵(MabinlinⅡ)的活性结构,总结了甜蛋白马宾灵在基因工程方面的研究进展,以期为进一步研究马槟榔的栽培及马宾灵的体外表达提供参考依据。

Abstract: Capparis masaikai Lévl. was a kind of peculiar wild plant in China, rich in sweet protein mabinin in seeds. In five homologs of the mabinlin family, mabinlinⅡ possesses many advanced properties, such as being around 400-fold sweeter than sucrose on weight basis, the most heat stable and acid resistant among seven types of plant sweet proteins. Thus it would be a novel natural sweetener in food industry and had broad market prospect. The research status of Capparis masaikai Lévl had been emphatically outlined in this article. The active structure of mabinlinⅡ had been analyzed and the research progress of mabinlinⅡ in the genetic engineering has been summarized. This article would provide valuable reference for further studies on the growth of Capparis masaikai Lévl and the external expression of mabinlinⅡ.
