Abstract: In order to define the nutrient indicators of 13 Malus prunifolia fruit varieties, and reveal the huge development and application potentials of Malus prunifolia, this paper identified different Malus prunifolia’s totalacid, Vc, soluble solids, organic acids, reducing sugar, total sugar, pectin and tannin contents, and applied the statistical analysis software to the cluster analysis. The study found that‘Hongxun 1’and‘Bingxin 2’had rich nutrients and the advantage of high acidity, so they were the best for raw material producing the fruit juice. This paper preliminarily defined the nutrients and development and application purposes of different Malus prunifolia, so as to provide scientific basis for further development of Malus prunifolia’s application value.
