摘要: 在综述了国内外对山杏的氨基酸组成、蛋白结构及功能特性的研究的基础上,分析了影响苦杏仁蛋白加工利用的不利因素,总结了中国目前苦杏仁蛋白的加工利用研究现状,结合国内外植物蛋白加工的新趋势,提出了今后苦杏仁蛋白加工利用的研究应向开发苦杏仁蛋白与其他植物蛋白混合产品、苦杏仁蛋白与动物蛋白混合产品、苦杏仁蛋白酶解产品及苦杏仁蛋白调味品等几个方向发展。

Abstract: On summarizing of the study on the composition of amino acid 、structure and functional properties of almond proteins , The paper analyzes the disadvantage factors which influence almond protein processing and sums up the status of almond protein utilization in our country. It brings forward four new ways on processing almond protein in future eg. exploiting the mixture of almond protein with other vegetable protein 、the mixture of almond protein with animal protein 、the enzymatic hydrolysis production and the flavoring of almond protein by analyzing the overseas trend on vegetable protein processing.
