摘要: 笔者综述了稻米的嗅香机理,香味的化学成分、鉴定方法与遗传,稻米的种类、加工过程、储藏条件对稻米香味的影响,以及育种研究方面的进展。

Abstract: In this paper,progress of studies the fragrance of rice was summarized involving the mechanism of sniffed scent, chemical composition, appraising method, inheritance of aroma, effect of rice varieties and machining process and condition of storage, rice breeding.
