乙烯吸收剂对丰水梨果实软化和细胞壁代谢的影响

Effect of Ethylene Absorbent on Fengshui Fruit Softening and Its Cell Wall Metabolism

摘要: 为了探讨乙烯吸收剂通过调控环境乙烯,进而抑制梨果实软化的作用,以丰水梨为研究材料,用PE18 μm保鲜袋包装,研究了乙烯吸收剂在0℃条件下,对果实冷藏期间果实硬度、乙烯释放以及细胞壁物质代谢的影响。结果表明,丰水梨果实乙烯释放高峰过后,伴随着果实软化,而果实乙烯释放与袋内环境乙烯浓度变化呈极显著正相关关系,果实硬度与水溶性果胶含量呈极显著负相关关系。乙烯吸收剂通过对环境乙烯的调控作用,抑制了果实乙烯释放和PME、PG活性的升高,使果胶物质降解速度受限,从而有效保持了果实硬度,延缓了果实软化进程。

Abstract: In order to investigate the ethylene absorbent by regulatory environment ethylene and to inhibit the pear fruit softening, the author studied on the effect of ethylene absorbent on the fruit firmness, ethylene production, the pear cell wall metabolism during fruit cold storage under 0℃ conditions, using Fengshui pear as the test materials covered with PE18 μm fresh-keeping bag. The results indicated that: the pear fruit was softening after the high peak of the ethylene release. There was a significantly positive correlation between the fruit ethylene release and the ethylene concentration environmental in the bag, but there was a significant negative correlation between the fruit firmness and the soluble pectin content. The ethylene absorbent to the environment ethylene regulation inhibited the fruit ethylene release and PME, PG activity, limited the pectin degradation speed, thus it was effectively to keep the fruit firmness and delay the fruit softening process.
