叶类蔬菜气调包装保鲜技术及其机理的研究进展

Research Progress of Preservation Technology and Mechanism of Leaf Vegetables Under MAP

摘要: 笔者简述了叶类蔬菜(简称叶菜)的保鲜现状,通过归纳国内外气调包装保鲜技术在叶菜上的应用研究,分析了气调包装技术在叶菜保鲜中低能耗、操作方便和安全可控的优点,指出了目前缺乏叶菜保鲜技术体系和针对性强、保鲜效果好的包装材料,在此基础上通过总结气调包装下自由基理论在水果和根茎类、瓜果类蔬菜上的应用,提出了基于自由基中心效应的叶菜气调包装保鲜机理,对转录组学和蛋白组学在揭示保鲜机理的应用进行了展望。

Abstract: The situation of leaf vegetables preservation was introduced in this paper. Advantages of modified atmosphere packaging (MAP) on leaf vegetables were summed up for its low energy consumption, easy and safe operation, with a review of MAP application at home and abroad. The lack of preservation technology system for leaf vegetables and better- targeted- preservation packaging materials were pointed out. Preservation mechanism based on fre radical center effect of MAP on leaf vegetables was put forward, with the summary of the application of free radical theory of modified atmosphere packaging to fruit and root vegetables, and fruits vegetables. Future applications of transcription and proteomics in preservation mechanism study were discussed in the last.
