几种因素对去皮果蔗保水影响的研究

摘要: 果蔗是一类专供鲜食的甘蔗,口味甘美,风味独特,具有解渴、解酒、解毒、清热、利尿等保健功能是深受群众喜爱的果品之一。本实验以鲜切去皮的果蔗为原料,通过控制温度,保鲜材料,湿度开展三因素三水平延长果蔗贮藏期研究。结果表明将鲜切果蔗去皮后贮藏在温度为2℃,湿度为90%,并用保鲜膜B包装具有最好的保水性和保藏效果。但易冻伤。

Abstract: Sugarcane is a kind of sweet fruit which has an unique and special flavour, it possesses the function of quenching one’s thirst, antialcoholic, clearing away heat and toxic material and it is benefit for urine, meanwhile, it is one of the most favorable food. In this experiment, the storage period is extended through the way of controling tempreture, keeping materials fresh, in addition, keeping the Ph value and humidity level after chopping the peels. Furthermore, in this experiment, the chopped sugarcane should be stored at the tempreture of 10 C belove zero and the humidity level of 90%, besides, it should be packed with B preservative film, for which is good at keeping water and storing
