核桃果实中酚类物质含量变化研究

摘要: 利用分光光度法测定并分析了晚实光皮绵核桃和地方特异性品种白水核桃在其果实生长发育阶段的青皮和种皮内酚类物质含量。结果表明:①核桃果实中酚类物质的含量是很高的;②光皮绵核桃和白水核桃两品种的种皮和青皮内果实酚类物质含量存在显著差异;③在核桃果实中酚类物质的含量多少在一定程度上影响核桃果实的品质。

Abstract: The change of the phenols contents in walnuts fruits was studied by spectrophotometric method.The result of the study showed :①The phenols contents in walnuts fruits were very high. ②the phenols contents of the outermost green peels in walnuts fruits were significantly lower than ones of the peels of the seeds. That is . The average contents of phenols were 122.6mg/g D.Wt and 384.4mg/g D.Wt respectively. ③ The higher level of the phenols contents in the peels of the seeds affected walnut fruits quality.
