准确的湿度控制对烟叶烘烤品质的影响

摘要:

采用温湿度控制烤烟箱,研究了温度控制和湿度控制对烟叶烘烤品质的影响。结果表明:准确的湿度控制烘烤出来的烟叶,橘黄烟和红棕烟比例明显增加,但杂色烟比例也稍有增多;同时烟碱、氯、总氮含量升高,总糖、还原糖含量减少,糖碱比接近于10,烟叶内在化学成分均在适宜的范围内;香气质、香气量、灰色和劲头都明显优于温度控制的烟叶,刺激性也较小,只是杂气略重;改善了烤后烟叶的香气质,提高了香气量,烟叶香气物质成分更加协调。

Abstract:

The effects of accurate humidity control on the flue-cured tobacco during curing were studied by using the electric-heated temperature and humidity auto-controlled flue-curing barn supplied by Henan Agricultural University. The results indicated that when the tobacco were cured by the accurate humidity control, the proportion of orange and reddish brown increased significantly, but the proportion of varied also added; the content of nicotine, chlorine, total nitrogen increased a little, while the content of total sugar, reducing sugar decreased, and the proportion of total sugar and nicotine was closed to 10, and the contents of chemical compositions were all in the fitting range; the quality and quantity of aroma, the cigarette ash and the physiological strength were all better than that cured by temperature controlled, and it was little irritancy, but the offensive taste was bad than that cured by humidity controlled, it also increased the quality and quantity of aroma, the aroma substance were more harmonious.
