河南陆浑水库太湖新银鱼肌肉营养品质分析

An Analysis of the Nutritive Compositions in the Muscle of Neosalanx taihuensis

摘要: 为了对河南陆浑水库小银鱼[主要是引种自太湖的太湖新银鱼(Neosalanx taihuensis)]的肌肉营养价值做出综合评判,对该种鱼的营养需要量的制定和计算提供依据,利用常规肌肉营养测试方法测定分析陆浑小银鱼的肌肉营养成分。结果表明:陆浑小银鱼肌肉(干样)中粗蛋白质量分数84.73%,粗脂肪质量分数3.23%。肌肉中含有18种氨基酸,总量为71.65%,其中8种人体必需氨基酸总量是30.62%,按照氨基酸评分(Amino Acid Score,AAS)和化学评分(Chemical Score,CS)标准,陆浑水库太湖新银鱼的限制性氨基酸主要是色氨酸和缬氨酸,必需氨基酸指数(EAAI)为47.79;4种鲜味氨基酸总质量分数为24.40%。肌肉中含有13种脂肪酸,其中EPA与DHA质量分数分别为10.21%和2.68%。其结果表明:河南陆浑水库小银鱼是营养价值较高,具有很高食用价值的淡水鱼类。

Abstract: Wild populations of Neosalanx taihuensis were sampled from nature waters of Luhun Reservoir in Henan Province. The capture was conducted in October 2009. The muscle nutritional composition of Neosalanx taihuensis from Luhun Reservoir was measured by conventional biochemistry. As a result, crude protein and crude fat of dry muscles were 84.73% and 3.23%.The composition of amino acids of muscle was 18 common amino acids and 8 essential amino acids for human needs. In dry sample the total content of amino acids was 71.65%; the content of essential amino acids was 30.62%. According to the amino acid score (AAS) and chemical score (CS), the first limiting amino acid of Neosalanx taihuensis was Trp, the second was Val. and the essential amino acid index(EAAI) was 47.79.In dry sample the content of four kinds delicious amino acids was 24.40%. The composition of fatty acids of muscle was 13 fatty acids, The contents of EPA and DHA in fatty acids were 10.21% and 2.68%, which were higher than some other economic fishes. It was indicated that Neosalanx taihuensis is one of freshwater fishes with better nutritive value and raising value, deserving exploitation and utilization.
