石榴果实花青苷差异性分析

Analysis of Differences for Anthocyanins in Fruit of Pomegranate

摘要: 为了探讨石榴果实中花青苷的种类及果皮和果肉间的差异,采用高效液相色谱-光电二极管阵列检测器联用技术(HPLC-PAD)和高效液相色谱-电喷雾离子化-多级质谱联用技术(HPLC-ESI-MSn),进行花青苷的定性及定量分析。结果发现,从11份不同产地观赏或食用石榴的果皮和果肉中,在525 nm共检测出10种花青苷成分,其中飞燕草素3-戊糖苷(Dp-3-pentoside)和芍药花素3-己糖苷(Pn-3-hexoside)首次从石榴果实中检测到。果皮和果肉中总花青苷含量无相关性,且种类也不完全相同。从检测的几种材料中发现,观赏石榴果皮中花青苷含量高于果肉,而食用品种果肉中的含量高于果皮。

Abstract: In order to find types and difference of anthocyanins in the peel and pulp of pomegranate, a high performance liquid chromatography with a photodiode array detector (HPLC-PAD) and HPLC electrospray ionization multiple mass spectrometry (HPLC-ESI-MSn) methods were employed for qualitative and quantitative analysis of anthocyanins. The results showed that: 10 anthocyanins were detected at 525 nm from 11 different origins of the ornamental or edible pomegranate peel and pulp, Delphinidin 3-pentoside and Peonidin -3-hexoside were first detected from pomegranate. It was not relativity in contents of anthocyanins in peel and pulp, and anthocyanins were not the same. The inspection found in several kinds of materials, anthocyanins contents in pulp of ornamental pomegranate were higher than in peel, and in peel of edible varieties were higher than in pulp.
