果胶酶应用的研究进展

摘要: 果胶酶是指能够分解果胶物质的多种酶的总称,目前果胶酶的应用较为广泛。为了更好的了解其在不同行业中的应用情况,促进该产业的发展,本研究总结了近年内果胶酶在饮料、活性成分提取、饲料、纺织等领域的应用情况,认为果胶酶在上述行业应用效果良好,未来有望进一步扩大应用范围及用量。但价格昂贵制约其大规模应用,为此需要在以下几个方面进行改进:(1)继续加强优良果胶酶菌种的筛选,进一步降低使用价格;(2)优化果胶酶作用的工艺条件,减少使用量;(3)加强果胶酶作用机理的研究;(4)利用新的分子生物学技术,使果胶酶保持良好的活性和稳定性。

Abstract: Pectinase is a heterogeneous group of related enzymes that can hydrolyze the pectic substances and was widely used. In order to know more about the application of pectinase in different industries, and accelerate the development of pectinase industry, the applications of pectinase in the fields of beverage, pectinase extraction of active components, feed and textile were summarized in this paper. Pectinase had a good effect in these fields, and it was expected to have more application and consumption. However, its expensive price was a key restrict factor for large- scale application, and the following aspects should be improved: (1) the screening of excellent pectinase strain should be strengthened to further reduce price of pectinase; (2) the process conditions of pectinase should be optimized to reduce the usage; (3) the regulation mechanism of pectinase should be strengthened; (4) keeping pectinase in better activity and stability with new molecular biology technology.
