Influence of three harvesting time on peel color, mean fruit mass, flesh firmness, total soluble solids, titratable acid and internal browning of flat peach No.4 cold stored was investigated to study best harvesting time of flat peach for long storage. The results showed that three harvesting time had not significantly affected to change trend of flesh firmness, total soluble solids and titratable acid. Flat peach No.4 of the second harvesting time (Firmness, 4.4 kg/cm2; TSS, 9.9%;TA, 0.1366%) had better quality and could be stored for two months.
