Abstract: In this study, 12 kind of elements etc. Ca, K, Mg, Al, Fe, Mn, Cu, As, Cd, Pb, Cr, Se in bamboo shoot products were determined by ICP-MS with microwave digestion. The results showed, the average recoveries were between 86% and 113%, the RSD<5%（n=6）, the limit of determination was 0.002μg/L ~2.471μg/L. The element contents of 4 bamboo shoot products were different, due to different material contents. The method is fast, simple and accurate, could be used to determine element contents in bamboo shoot products.
