紫甘薯花青素提取纯化技术研究进展

摘要: 紫甘薯中的花青素色泽红紫、安全无毒,具有抗氧化、抗突变、保护肝脏、预防心血管疾病等保健作用,而且是一种天然的食用色素,可应用于许多行业。归纳了国内外相关紫甘薯花青素提取纯化的研究概况,总结了紫甘薯花青素提取纯化技术的主要研究进展,分析了紫甘薯花青素提取纯化技术的主要流程和食用安全利用价值。提出了当前紫甘薯花青素提取纯化技术需要深入开展的研究论题,并对紫薯花青素的开发利用进行了展望。

Abstract: Purple sweet potato(PSP) anthocyanins has strong antioxidant activity and many other advantages such as, safe, non-toxic, anti-mutation, protect the liver, and the prevention of cardiovascular disease and other health effects, and is a natural food coloring, can be used in many industries. This paper summarized the domestic and foreign PSP anthocyanin extraction and purification technology, and the main research progress of Anthocyanin extraction and purification technology from PSP, This paper also analysis of the main flow of PSP Anthocyanin extraction and purification, and the food safety of the use of PSP anthocyanin. This paper proposed to carry out the research topics about the extraction and purification technology of PSP anthocyanin, and prospected the development and utilization of PSP anthocyanin.
