不同荞麦品种种壳营养成分研究

摘要:

荞麦是一种重要的药食同源杂粮作物,具有良好的药用和营养价值。本文以20个荞麦品种为材料,系统分析了不同荞麦品种种壳的营养功能成分差异。结果发现:不同荞麦品种种壳的营养成分存在显著差异。黄酮含量以‘正宁红花’、‘宣威甜荞’和‘米荞1号’最高,分别为12.8、12.5和10.6 mg/g,‘定甜2号’含量最低,比其分别高66.2%、62.3%和37.7%。芦丁含量以‘米荞1号’最高,为3.66 mg/g,显著高于其他品种。木质素含量以‘米荞1号’最高,为34.6%,‘苦刺荞’含量最低(21.9%),比其高58.1%,而纤维素含量则表现相反。可溶性糖和蛋白质含量在各品种间无明显的变化规律。综合可看出,‘米荞1号’品种种壳具有较高的营养价值,在荞麦壳制品开发中值得进一步推广应用。

Abstract:

Buckwheat is an important medicinal and edible minor cereal crop, which has good medicinal and nutritional value. In this paper, 20 buckwheat cultivars were used as trial materials to analyze the differences of nutritional and functional components in seed-case of different buckwheat cultivars. Results showed that there were significant differences in nutritional components of different buckwheat cultivars. The flavonoid content of ‘Zhengning Honghua’, ‘Xuanwei buckwheat’ and ‘miqiao 1’ were the highest among all the cultivars, being 12.8, 12.5 and 10.6 mg/g, respectively, which was 66.2%, 62.3% and 37.7% higher than that of ‘Dingtian 2’. The rutin content of ‘Miqiao’ (3.66 mg/g) was the highest among all cultivars. Also, the lignin content of ‘Miqiao’ was the highest (34.6%), which was 58.1% higher than that of ‘Kuciqiao’ (21.9%), while the change trend of cellulose content was the opposite. The soluble sugar and protein content had no obvious change trend among the cultivars. It can be concluded that the seed-case of ‘Miqiao 1’ has relatively high nutritional value, which is worthy of further promotion in the development of buckwheat seed-case products.
