云南烟区烤烟‘KRK26’中部叶片质体色素在烘烤中降解产物的种类、含量及其相关性

Category, Contents and their Correlations of the Degradation Products of the Plastid Pigment of the Middle Part Leaves of the Tobacco Variety ‘KRK26’ from Yunnan Tobacco-growing Area during Flue-curing

摘要:

探索云南烟区‘KRK26’叶片质体色素在烘烤中的降解特征,为其香气品质评价和烘烤参数优化提供参考。基于气-质联用法研究云南玉溪烟区津引烤烟‘KRK26’中部叶片质体色素在三段式烘烤中降解产物的种类、含量及其相关性。结果表明:在烘烤中,‘KRK26’类胡萝卜素的主要降解产物有11种,叶绿素的有3种。β-大马酮、β-二氢大马酮、二氢猕猴桃内酯、巨豆三烯酮1、2、3和4、金合欢基丙酮和茄酮含量的最高值均出现在干筋期,3-羟基-β-二氢大马酮和3-氧代-α-紫罗兰醇的均在定色前期,吡咯、新植二烯和呋喃的分别在变黄前期、定色后期和变黄中期。类胡萝卜素和叶绿素不同降解产物含量间的差异、类胡萝卜素降解产物含量在烘烤不同阶段间的差异均达到极显著水平,但叶绿素降解产物含量在不同阶段间的差异未达到显著水平。质体色素降解产物的含量间存在极显著、显著、不显著正相关或显著、不显著负相关。类胡萝卜素的优势降解产物在各烘烤阶段均主要为茄酮、总巨豆三烯酮、金合欢基丙酮和β-大马酮,叶绿素的为新植二烯;新植二烯含量占类胡萝卜素和质体色素主要降解产物总量始终分别在94.0%和89.8%以上。所以,新植二烯、茄酮、总巨豆三烯酮、金合欢基丙酮和β-大马酮是决定‘KRK26’香味品质的主要物质。

Abstract:

To explore the degradation characteristic of the plastid pigment of the ‘KRK26’ leaves from Yunnan tobacco-growing area during flue-curing, providing a reference for the assessment of the aroma quality and the optimization of the flue-curing parameters of the tobacco variety. The category, contents and the content correlations of the degradation products of the plastid pigment of the middle part leaves of the Zimbabwe tobacco variety ‘KRK26’ from Yuxi tobacco-growing area of Yunnan Province during three phase flue-curing were studied on the basis of Gas chromatography (GC)-Mass spectrum (MS) analysis. The results indicated that, during the flue-curing, 11 main degradation products of the carotenoid (Car) and 3 of the chlorophyll (Chl) were detected. The highest contents of β-damascenone, β-damascone, dihydroactinodiolode, megastigmatrienone 1, 2, 3, 4, farnesylacetone and solanone were all at the stem-drying, those of 3-hydroxyl-β-damascone and 3-keto-α-ionol at the early period of the color-fixing, and those of pyrroles, neophytadiene and furans at the early period of the yellowing, the later period of the color-fixing and the middle period of the yellowing respectively. The content differences of the different degradation products of the Car and Chl and the difference of the degradation product contents of the Car at the different flue-curing stages all reached the extremely significant level, but the difference of the product contents of the Chl at the different stages did not reach the significant level. Extremely significant, significant and non-significant positive correlations or significant and non-significant negative correlations were found among the contents of the degradation products of the plastid pigment. The predominant degradation products of the Car at the different stages were all mainly solanone, total megastigmatrienones, farnesylacetone and β-damascenone and the predominant product of the Chl was neophytadiene whose content percentages in the total quantities of the main degradation products of the Car and the plastid pigment were more than 94.0% and 89.8% respectively all the time. So, the chief materials determining the aroma quality of ‘KRK26’ were neophytadiene, solanone, total megastigmatrienones, farnesylacetone and β-damascenone.
