蓝莓花色苷研究进展

Advances in Research on Anthocyanins of Blueberry

摘要:

花色苷是一种广泛存在于植物中的功能性水溶色素,它作为具有重要生理活性的天然着色剂应用于食品、药品及化妆品当中。近年来,蓝莓因富含花色苷而成为国内外研究的热点,笔者系统论述了蓝莓花色苷的结构种类,不同蓝莓品种的含量,pH、金属离子和其他因子对其稳定性的影响及传统溶剂提取与辅助分离技术等相关研究进展,认为其结构稳定性是制约蓝莓花色苷产业发展的重要因素,提出深入研究花色苷降解机制的同时应开展提高其稳定性及综合加工利用等尝试,为进一步开展蓝莓等富含花色苷的越橘类浆果加工研究提供有益参考。

Abstract:

Anthocyanins is a kind of functional water-soluble pigment, which pared wildly in plants, and has an important physiological activity for use as natural colorants in food, pharmaceutical and cosmetics. In recent years, researches on blueberry have increased rapidly due to their rich in anthocyanins. This article reviewed the structure types and content of anthocyanins from different varieties of blueberries, pH, metal ions and other factors affect its stability and the traditional solvent extraction with other assisted separation techniques, discussed its structural instability is an important factor restricting the development of blueberry anthocyanins industry. At the same time, proposed to study of the anthocyanin degradation mechanism and try to improve its stability and utilization, it is of significance to enhance investigations on the blueberry or Vaccinium berries anthocyanins.
