重庆不同品种葡萄营养成分和原花青素含量分析

The Analysis of the Nutritive Components Contents and Procyanidins in Different Kinds of Grape in Chongqing

摘要:

为了选出综合表现最好、最适合重庆地区栽培的葡萄品种,以重庆地区主栽的‘蜜莉’、‘巨峰’、‘夏黑’和‘巨玫瑰’等葡萄品种为材料,测定果实的物理指标以及糖、酸、维生素C、可溶性固形物等品质指标和原花青素含量,为品种选择提供依据。实验结果表明:‘巨峰’总糖含量最高,‘巨玫瑰’含量最低;总酸‘蜜莉’含量最高,‘巨玫瑰’含量最低;‘夏黑’维生素C含量最高,‘蜜莉’含量最低;可溶性固形物‘夏黑’含量最高,‘巨峰’含量最低。果皮和果汁原花青素含量是‘巨玫瑰’>‘夏黑’>‘巨峰’>‘蜜莉’,种子原花青素含量是‘巨玫瑰’>‘巨峰’>‘蜜莉’,‘夏黑’为无核品种。同一品种不同部位原花青素含量是种子>果皮>果汁。

Abstract:

In order to choose the best comprehensive performance grape variety that most appropriate cultivated in Chongqing, the main grape variety ‘Michili’, ‘Kyoho’, ‘Summer Black’ and ‘Muscat Kyoho’ in Chongqing were chose as the materials, determining the physical parameters of the fruits, sugar, acid, vitamin C, soluble solids and procyanidins content to give the basis for species selection. According to the physical and chemical properties analysis, sugar content of ‘Kyoho’ was the highest, and ‘Muscat Kyoho’ had the lowest sugar content. Total acid content of ‘Michili’ was the highest, and ‘Muscat Kyoho’ was the lowest. Vitamin C content of ‘Summer Black’ was the highest, and ‘Michili’ was the lowest. Soluble solids content of ‘Summer Black’ was supreme, and ‘Kyoho’ was the lowest. The determination results of Procyanidins content in the four varieties showed that the procyanidins content was significant different, the procyanidins content of peel and juice was as follows: ‘Muscat Kyoho’>‘Summer Black’>‘Kyoho’>‘Michili’. The procyanidins content of seed was as follows: ‘Muscat Kyoho’>’Kyoho’>’Michili’, ‘Summer Black’ is non-nuclear varieties. The procyanidins content of different parts of the same breed is: seed>peel>pulp.
