物理气调法片烟养护及醇化效果研究

Conservation and Alcoholization of Flue-cured Tobacco Lamina by Physical Modified Atmosphere Method

摘要: 为进一步加深对物理气调法的了解,研究了物理气调法片烟养护效果及片烟醇化品质随时间的变化规律。结果表明,物理气调法能使堆垛内氧气浓度稳定保持在适宜片烟醇化范围内。使用物理气调法时,堆垛内相对湿度对外界湿度条件的敏感性较低,有利于在高湿条件下防止烟叶受潮霉变。在12个月的醇化周期内,片烟绿原酸、芸香苷、叶黄素和β-胡萝卜素等香气前体物含量呈氧化分解下降趋势,片烟的醇化过程朝着改善品质的方向进行。物理气调法经低氧处理再将氧气浓度回调至15%~21%的处理片烟感官品质最佳;与化学气调法相比,物理气调法更有利于提升片烟醇化质量。

Abstract: To further deepen the understanding of physical modified atmosphere method, the effect of controlled atmosphere and varying pattern of alcoholization quality of the flue-cured tobacco lamina were researched. The results proved that: physical modified atmosphere method could keep stable oxygen concentration within fitting zone for the alcoholization of the flue-cured tobacco lamina. Using the method of physical modified atmosphere, the sensitivity between stacking internal relative humidity and the outside humidity was low, the flue-cured tobacco lamina was in favor of preventing be affected with damp and mildew under high humidity conditions. After 12 months of alcoholization, compared with chemical modified atmosphere method, the aroma precursors material of the physical modified atmosphere method such as chlorogenic acid, rutin, lutein and β-carotene degradation was more fully, the alcoholization quality of the flue-cured tobacco lamina had certain degree of ascension. The sensory quality of the flue-cured tobacco lamina was best with the treatment of the oxygen concentration call backed to 15%-21%. The alcoholization quality of the flue-cured tobacco lamina of physical modified atmosphere method was better than the chemical modified atmosphere method.
