Abstract: Apricot fruit qualities including flavonoid contents and carotenoids contents in Prunus armeniaca Golden-sun and Prunus armeniaca Kuijin cultivars were studied at three mature stages of green mature, commercial mature and ripening. The result indicated that average fruit mass, contents of total soluble solids, vitamin C, soluble sugar, flavonoid and carotenoids increased with fruit maturation, and attained the highest levels at ripening, while fruit hardness and content of organic acid decreased gradually with fruit maturation and attained the lowest levels at ripening. Results also showed that general fruit qualities of Kuijin was better that of Golden-sun. Key words: Apricot; Maturation Period; Soluble Sugar; Flavonoid; Carotenoids
