Dark Grain Wheat Pigment Stability Study

Abstract:

Black grain of wheat is a new class of varieties in China in recent years, and it riches natural melanin and nutritional value. However, the black grains of wheat from the natural pigment extracted and studied its physical and chemical properties had not yet relevant reports, and research in this area would develop a natural pigment black grain of wheat, and had an important practical significance. In this paper, the black grains of wheat for the material, it extracted natural pigments and pigment stability of the nature of the study. The results showed that, it was soluble in water, ethanol and other polar solvents, water-soluble pigment. And it showed red under acidic conditions, alkaline under green. The black pigment of wheat grain was more than the heat (<80℃). Ca2+, Ba2+, K+, Fe3+, Al3+, Cu2+, Mg2+ these metal ions had a certain elegance to the role of pigment, but Ba2+, Al3+, Fe3+ there appear to precipitate. Vc, H2O2 of pigment color lighter, Na2HSO4 fade the pigment had a strong role. Salt, sugar, citric acid on the black pigment of wheat grain had hyperchromic effect. So, the black pigment of wheat grain physical and chemical properties was stable, which was an ideal natural color additive.
