Nutritional Component Analysis and Quality Evaluation of Large White-Plumage Mule Duck

Abstract: In order to study the characters of meat quality of white-plumage mule duck, the nutritional components, the content of amino acids, the content of fatty acids and the protein nutritive value in the chest muscle of large white-plumage mule ducks were analyzed and evaluated. The results showed that the contents of moisture, crude protein, crude fat and crude ash in the chest muscle were 75.57 %, 21.79 %, 0.96 % and 1.33 %, respectively. And the total amino acid (TAA), essential amino acids(EAA), delicious amino acids were 202.37 mg/g, 83.20 mg/g and 72.50 mg/g, respectively. According to the amino acids score (AAS) and the chemical score (CS), the first limiting amino acid was Met + Cystine and the second was Valine. The ratio of unsaturated acids to saturated acid was 1.22. There were significant differences in glutamic acid and fatty acid C16:0 between the female and male ducks and extremely significant differences in fatty acid C18:2. In conclusion, large white-plumage mule duck was characterized by high content of protein and amino acid as well as low content of fat.
