Research Advances on Protein Traits Analysis and the Main Impact Factor of Wheat in China

Abstract: Wheat, being the third major grain crop in China, is an important source of human proteins, its quality and production has a direct impact on the development of agricultural economy and food industry. Studying and improving the protein quality of wheat becomes the key to solve this contradiction. This paper reviewed the existing literatures of home and abroad, analyzed the present situation and existing problems of wheat protein quality, summarized the research progress from genetic model, the main factors, and the correlation between protein quality traits and other traits, discussed the status of wheat protein quality traits and the suggestions for high-quality wheat breeding method, so as to provide theoretical basis for research on wheat quality improvement.
