Research on softening and senescence of the Chinese Jujube Fruit (Zizyphus Jujuba Mill. cv. Dong)

Abstract: The changes of firmness, respiratory rate, PE activity, PG activity, SOD activity, POD activity and MDA contents in Jujuba fruit were studied after they were harvested at half-red stage. The results showed that the firmness changed with the stages; and the change of PE activity was negatively correlated to the change of firmness, PG night be attend the start of softening. The activity of SOD and POD showed the declined trend with the softening, the correlated coefficient between SOD, POD and firmness wasn’t notability. The change of MDA contents was negatively correlated to the changes of firmness.
