Effects of Water Stress on Quality Characters of Different Types of Gluten Wheat Grain

Abstract: Three wheat cultivars that represent strong, medium-strong and weak gluten properties were cultivated in proof-rainfall-trough to evaluate the effects of water stress on quality characters of wheat grain. The results showed that there are different in main quality characters of wheat grain under different varieties and different water conditions. Crude protein content, wet gluten content and sedimentation decreased under water stress,however, swelling power increased. In different types of gluten wheat, there are significantly positive related among crude protein content, wet gluten content and sedimentation. It is proposed that the influence of water factors on grain quality traits was overall asynchronous, and thus should be carefully consider in undertaking breeding programs and cultivating regulations for wheat quality improvement.
