Abstract: Fusarium toxins are a variety of secondary metabolites produced by Fusariums which are widely distributed in nature. The Fusarium toxins are dangerous food contaminants and risks to human and livestock health. So, research on the Fusarium toxin is one of the most urgent problems. In this paper, the damage of Fusarium toxins and detoxification methods are reviewed.
