Abstract: Vitamin E, the indispensable nutritive value of which has been revealed, was originally discovered as an essential element for reproduction. Vitamin E has great ability of antioxidation and health protection. Edible plant oil is particularly rich in vitamin E. As an effective oxidant, vitamin E plays an important role in protecting oil from being oxidated by free radicals and from rancidity, which could enormously prolong its shelf life. The past large number of researches on vitamin E metabolism have revealed all the steps in vitamin E biosynthesis, making it possible to regulate vitamin E content through genetic engineering. To date, researches to improve vitamin content in oilseed crops have been mainly focused on the tow following strategies, enhancing the total volume of vitamin E and increasing the percentage of α-tocopherol, the form of vitamin E displaying the greatest efficacy.
