The Extraction and Stability of Anthocyanin from leaves of Acer Truncatum Bunge

Abstract:

Extraction of anthocyanin from the leaves of Acer truncatum bunge and its stability were studied in this paper. The main results were as follows: The optimum extraction conditions of anthocyanins from acer truncatum bunge were established with alcohol containing 0.1%HCL, 6h extraction period . The anthocyanin from acer truncatum bunge was sensitive to light. It was stable under darkness and 4℃; It was also observed that anthocyanin was stable while the pH was 2.0. With pH increasing , its stability was dropped significantly.
