Abstract:
The stability of greeen pigment from scheffera were studied in this paper. The results showed that the pigment is stable in acidic conditions. It was also resistant to carvohydrates and preservatives such as potassium sorbate, sodium benzoate and citric acid. However the pigment was resisitant to Vitamin C and H2O2. Metallic ions such as Cu2?, Mg2?, Ca 2?, K?, Na? and Zn2? have few effect on it.
