Abstract: "Lemons" problem leads to the market malfunction in agricultural products market. It is necessary to promote the market equilibrium to move from the low efficient state to the high efficient state that "Lemons" problem existing in agricultural products market should be resolved. Based on food safety this paper attempts to give a systematic summary on the "Lemons" problem existing in agricultural products market and its countermeasures. The prospects of this field are also put forward.
