Study on selenium content in black bean using polarograph method and technology of selenium enriched

Abstract:

The black bean as raw materials was enriched with selenium and selenium content was detected using the method of polarograph. Different concentrations of selenium were added to black bean by soaking and spraying to obtain selenium-enriched black bean during the process of the black bean sprouting. The result indicated that the optimum cultivation condition of selenium-enriched black bean sprouts was the concentration of selenium solution 10 μg/mL and the cultivated time 48 h. The content of selenium in the selenium-enriched black bean reached 15.44 μg /100 g.
