Research of sprouts characteristics of mung bean from different region

Abstract:

Discussed the differences of sprouts indictors between mung bean main producing regions and other
regions such as nutrient content, bean sprouts output and sprout hypocotyl pattern, to provide a theoretical
basis and technical support for sprout mung bean varieties selecting and plantation constructing. Utilized
fifty-five representative resources of mung bean in domestic as test materials, simulated factory germination
process, measured physical and chemical indicators of mung bean and morphological traits of mung bean
sprouts in common methods and then analyzed nine of traits indicators of mung bean and mung bean in
statistics sprouts. Among nine traits of mung bean, the differences of sprouts output, hypocotyl length, thick
hypocotyls and nutrients contents between main producing regions and other regions were not significant;
average value of protein content of mung bean in main producing regions which was 23.051% was lower than
that of mung bean in other regions which was 24.073%; average value of starch content of mung bean in main
producing regions was 57.188% which was significant higher than that other regions with that value of
55.826%. Generally speaking, there was no significant difference of production and morphological traits of
mung bean sprouts between different regions and the starch content of mung bean in main producing areas was
more than other regions while the protein content was less than other regions.
