Abstract:
The nutritive compositions of fruit vinegars ( seabuckthorn vinegar, persimmon vinegar and apple vinegar) were studied in this paper, by comparing with mature vinegar. Gas chromatography-mass spectrometry (GC-MS) were employed to determine the organic acid. fruit vinegar had much organic acid, and seabuckthorn vinegar had the most(total 46), persimmon vinegar contain 25, apple vinegar contain 32, mature vinegar contain 35. fruit vinegars contains some special organic acids, and had much healthy function.
