发酵床养殖模式下鸡生长性状、肉品质及屠宰性能的研究

The Growth Traits, Meat Quality and Slaughtering Performance of Chicken Under Fermentation Bed Feeding Mode

摘要: 本研究以肉鸡为研究对象,研究发酵床饲养模式下,鸡生长性状、肉品质及屠宰性能的对比分析。研究结果显示,生长性状:第一批次5周龄体重发酵床模式极显著高于网上平养模式(P<0.01); 9周龄体重发酵床模式极显著高于网上平养模式(P<0.01)。第三批次5、6、9周龄体重发酵床模式极显著高于网上平养模式(P<0.01); 8、10周龄体重发酵床模式显著高于网上平养模式(P<0.05)。肉品质:在胸肌品质中:第二批次失水率网上平养模式极显著低于发酵床模式(P<0.01)。第三批次水分网上平养模式显著低于发酵床模式(P<0.05);粗蛋白网上平养模式极显著高于发酵床模式(P<0.01)。在腿肌品质中:第一批次PH值发酵床模式极显著低于网上平养模式(P<0.01);剪切力发酵床模式极显著高于网上平养模式(P<0.05)。结论①发酵床养殖模式下鸡体重优于网上平养模式;②三批次试验鸡产肉性能均较好;③发酵床养殖模式下肉质优于网上平养模式,腿肌品质优于胸肌。

Abstract: In the fermentation bed feeding mode, the growth traits of broiler hen were recorded in 3 batches, after 10 weeks, 40 hens were chosen from every mode for slaughtering, and the slaughter performance and quality analysis are carried out. Results showed that: for growth traits, the weight of 5 and 9 weeks of the first batch in fermentation bed feeding mode was significantly higher than that of flat online mode (P<0.01), the weight of 5, 6 and 9 weeks of the third batch in fermentation bed feeding mode was significantly higher than that of flat online mode (P<0.01); for meat quality, the filtration rate, moisture content and crude protein of chest muscle in flat online mode were significantly inferior to those in fermentation bed mode (P<0.05). The pH value and shear force of leg muscle quality in fermentation bed mode was significantly lower than those in flat online mode (P<0.05). Therefore, the fermentation bed feeding mode is superior to the flat online mode and can achieve zero discharge and clean production, worthy to be recommended to small and medium-sized feeding farms.
