晾烟调制研究进展

摘要:

文章阐述了晾烟调制过程中内含物的主要变化时期和变化结果,对2种主要晾烟(白肋烟和雪茄烟)的调制工艺进行了归纳,总结了目前晾烟调制过程中应用的各种简便的温湿度调控技术。认为目前关于晾烟调制的研究多集中在白肋烟,雪茄烟调制方面的研究较少且集中在雪茄烟调制过程中内含物的变化规律、调制方式和调控技术对烟叶品质的影响方面。今后需对雪茄烟调制过程中内含物的转化机理、调制期细胞组织超微结构变化和微生物群落演化及功能进行研究分析,优化调制工艺,制定雪茄烟调制的各项标准。

Abstract:

In this paper, the main physiological and biochemical change periods of inclusions and the change results in the process of air-curing tobacco modulation were discussed, the modulation techniques of two main types of tobacco (burley and cigar) were summarized, and various simple and convenient temperature and humidity control techniques applied in the process were summed up. It is concluded that most of the studies on the air-curing of tobacco have focused on burley tobacco, while only a few studies have focused on cigar tobacco, mainly on the changes of inclusions and the effects of curing methods and control techniques on the quality of tobacco leaves. In the future, it is necessary to further analyze the transformation mechanism of inclusions during cigar air-curing modulation, as well as the ultrastructural changes of cell tissues and the evolution and function of microbiota, optimize the modulation process, and formulate the standards of cigar air-curing.
