梨果皮色素含量的测定方法研究

摘要:

为找到适用于不同梨果皮颜色色素含量的测定方法,采用2种测定方法对‘新梨7号’‘秋月’‘鸭梨’‘玉露香’‘香红梨’5个不同果皮颜色的梨品种进行叶绿素和总类胡萝卜素含量的测定。结果表明,对于‘新梨7号’和‘玉露香’,80%丙酮浸提法和95%乙醇浸提法测得的总叶绿素含量、叶绿素a含量、叶绿素b含量和总类胡萝卜素含量均差异不显著。对于‘鸭梨’‘香红梨’‘秋月’,80%丙酮浸提法和95%乙醇浸提法测得的总类胡萝卜素含量差异不显著,但80%丙酮浸提法测得的总叶绿素含量、叶绿素a含量和叶绿素b含量显著高于95%乙醇浸提法测得的含量。80%丙酮浸提法适用于测定所有品种梨果皮的叶绿素含量和总类胡萝卜素含量。测定果皮颜色为绿色和绿色为底色有红晕的梨果皮叶绿素和总类胡萝卜素时,可优先选择95%乙醇浸提法。若只需测定总类胡萝卜素含量,所有果皮颜色的梨均可选择95%乙醇浸提法。

Abstract:

The paper aims to find a method suitable for determining the color pigment content of different pear peels. The chlorophyll content and total carotenoid content were determined for five pear varieties with different peel colors, namely ‘Xinli No.7’, ‘Akizuki’, ‘Yali’, ‘Yuluxiang’ and ‘Xianghongli’ by two methods. The results showed that for ‘Xinli No.7’ and ‘Yuluxiang’, the total chlorophyll content, chlorophyll a content, chlorophyll b content and total carotenoid content measured by the 80% acetone extraction method and the 95% ethanol extraction method weren’t significantly different. For ‘Yali’, ‘Xianghongli’ and ‘Akizuki’, the total carotenoid content measured by the 80% acetone extraction method and the 95% ethanol extraction method wasn’t significantly different, but the total chlorophyll content, chlorophyll a content and chlorophyll b content measured by the 80% acetone extraction method were significantly higher than the content measured by the 95% ethanol extraction method. The chlorophyll content and total carotenoid content of pear peels of all varieties can be determined by 80% acetone extraction. When determining the chlorophyll and total carotenoids of pear peel with green color and green as the background color with red halo, the 95% ethanol extraction method can be preferred. If the total carotenoid content is only required, all peel colors can be extracted with 95% ethanol.
