Studies on the Relationships between Sucrose Accumulation and Related Enzymes Activities in Developing ‘Shuguang’ Peach Fruit

Abstract: The changes of sucrose accumulation and related enzyme activities in sugar metabolism were studied with ‘Shuguang’ peach during fruit development. The results showed that fructose and glucose were the main soluble sugar at the early development stage, and then declined gradually with fruit developing. On other hand, the sucrose content increased significantly and become the mostly sugar at the later stage of fruit development. The correlation analysis indicated that the activities of the cell wall-bounded acid invertase and soluble neutral invertase had significant negative correlation with sucrose contents in the whole stage of fruit development. Moreover, the activity of sucrose synthase also showed a highly positive correlation with sucrose accumulation during fruit development. It is concluded that the sucrose accumulation in ‘Shuguang’ peach fruit mainly dominated by invertase and sucrose synthase.
