Correlation Study on the Plumule Ratio and Protein Content of Rice

Abstract:

To investigate the correlation between the plumule ratio and protein content of rice, the brown rice of ten varieties which were uniform planting and harvesting was used as the experimental materials. Plumule ratio of the milled rice with different milled time was counted. Then the protein content of the brown rice and milled rice with different milled time was measured by Kjeldahl determination and Bradford determination to study the correlation of plumule ratio and protein content. Finally, the differences were compared between various protein components of the varieties with SDS-PAGE analysis. The results showed that the plumule ratio was different between different varieties and decreased with prolonging the milled time. The protein content has correlation with the plumule ratio of milled rice. Generally the protein content of milled rice loses less if the plumule ratio changes slightly, although the exception existed. Besides, the percentage of glutelin and gliadin increased and albumin and globulin decreased with the extension of milled time.
