Molecular Research Progress of Microbial Transglutaminase

Abstract: Transglutaminase can generate covalent cross-links between protein molecules or intramolecular covalent cross-links to change functional properties of proteins, and is applied in industries of food processing, medicine,cosmetic and textile. Microbial transglutaminase has aroused much more attention because of its calcium-independent and broader substrate specificity. The gene sequence characteristics, crystal structure, enzymatic characteristics and gene expression of microbial transglutaminase were summarized.
