Isolation, Screening of Yeast and Identification of Functional Yeast from the Traditional Fermented Soybean Paste

Abstract: In order to study the fibrinolytic enzyme producing bacteria in soybean paste, traditional microbiological methods and molecular biology methods were used to isolate, culture and identify the fibrinolytic enzyme producing bacteria during different fermentation periods of soybean paste. Seven fibrinolytic enzyme producing bacteria were obtained among these bacteria, in which HDBF- 1 had higher fibrinolytic enzyme production. The 16S rDNA results of HDBF- 1 compared with the GenBank database showed that HDBF-1 is belonging to genus of Xanthomonas sp., the same genus with Xanthomonas campestris.
