Potato Lectin of Shanxi Varieties: Analysis on Mass Fraction

Abstract: To study the mass fraction of potato lectin in different potato varieties (strains) of Shanxi Province, the potato lectin solution was obtained by purifying the potato sample solution by macroporous resin column chromatography. Then, the levels of potato lectin in different potato varieties (strains) in Datong, Shanxi Province were assessed by measuring the absorbance and agglutination activity titer. The results showed that the purification of potato lectin by macroporous resin column chromatography was effective, and the filtrate could be used for subsequent analysis and determination. According to the comprehensive evaluation of absorbance value and coagulation effect, the sequence of potato lectin in different potato varieties (strains) was: 05-32-7> Tongshu 30> Jinshu 27> Tongshu 30> Jinshu 23.
