Abstract: This paper studied integrated quality of Jingbai pears for three harvest dates which were picked at 130,137 and 144d after full bloom(DAFBⅠ—Ⅲ). Results are indicated: Jingbai pears is a kind of typical respiration climacteric fruit. There was significant difference for weight per fruit , ethylene production, flesh firmness, soluble solids contents, pH, coloration index of seed, pericarp color between different harvest dates. These can be the major technological index as the optimum harvest maturity of Jingbai pears. During shelf-life period, the later the harvest date, the shorter start-up time it took to the fruits of ethylene peak. Meanwhile, the later the harvest date, the higher solids contents and L value.
