Abstract: To investigate the cracking mechanism of jujube fruit, the changes and the anatomical structures of Zizyphus Jujuba ‘Jingzao39’ fruit an the stage of enlargement in different locations including cuticle, epidermis, sub-epidermal cell, mesocarp cells, the vascular thickness and the size of cavity were studied by microscopy in this text. The results showed that jujube fruit increased in volume with the gradual development of mature fruit, the changing trends of the cuticle thickness, the epidermal thickness, the size of sub-epidermal cell, the size of mesocarp cell and the vascular thickness were consistent, showed a gradually increasing trend. The changing trends of the size of cavity was different, showed “low-high-low” single-peak curve. The fruit enlargement and the jujube directions could have significant influence on anatomical structure of jujube fruit.
