Abstract: This paper reviews the research on kiwifruit postharvest physiology and preservation technology in the latest years. The postharvest physiology contains the change of hardness, change of fruit flavor and color, change of inclusion, ethylene metabolism, enzyme activity and the preservation technology includes hormone preservation, physical preservation, chemical preservation. This study will contribute to the healthy development of the kiwifruit industry.
