Research Advances of Fructan Biosynthesis, Relevant Genes and its Function in Higher Plants

Abstract: Fructans, or polyfructosylsucroses, are fructose polymers that start from sucrose. They are major reserve carbohydrates and osmolytes, which render plants tolerant to various stresses. Fructans are also considered as healthy food ingredients, which promote human health in diverse ways. Plant is the major resource of fructans. Various fructosyltransferases were related to fructan biosynthesis. Different fructan molecules can be produced by the concerted action of different fructosyltransferases. Fructan biosynthesis pathway, relevant genes and its function were briefly reviewed in the present article.
