Abstract: Vegetables are the most important things without which people cannot survive in daily life.But it is a kind of crop that contain rich nitrate.However, the nitrate accumulation does great harm to people’s health.Some researches show that, using too much nitrogenous fertilizer which cause the soil nitrate accumulation is the main reason why the vegetables contain too much nitrate accumulation. Scholars from many states have studied the methods and solutions from different ways and different points of view, but most of them dispersed relatively, this paper summed up the status of the nitrate accumulation and the impact to groundwater,vegetables, atmosphere and human body.then make some useful solutions such as select the low nitrate accumulation vegetables and applying scientific cultivation and management measures.
