Effects of Single and Complex Chitosan Coating on Grape Preservative

Abstract:

In order to study the effects of a single and complex chitosan coating on keeping fresh and physiological metabolism of grape(Vitis vinifera L. cv. Heiti)during storage at room temperature, rate of good fruit and weight loss, respiratory intensity, content of titratable acid (TA) and malonaldehyde (MDA), superoxide dismutase (SOD) activity were determined after treated with a single chitosan coating or complex film composed of chitosan and tea-polyphenols or allicin. The results showed that chitosan coating significantly reduced the respiratory metabolism and water loss, decreased the loss of TA content, and increase good fruit rate, as well as decreased MDA accumulation and maintained a higher level of SOD activity. By comparison, the keeping fresh effects of complex chitosan coating on grape were better than those of a single chitosan coating. Therefore, complex chitosan coating for the preservation of grapes have good application prospects.
